Tuna Tuesday…We’re Back!

The family made it back from Italy alive.  We had fun, we learned to cook Italian favorites, we struggled, we applied face masks, we cried, and we ate our hearts out! There is so much to say about the trip…but you’ll have to wait to hear about it all.  I know, I know.  I said I would share our Italian adventures.  However, we need a few moments to organize our thoughts and plan how to tackle this post or series of posts.  Yes, a lot happened! Rest assured our Italy recap is on the way.

In the meantime, I want to share my latest lunchtime obsession: Tuna Packs! I’ve had these many times before but only recently started getting a little fancy with them. My favorites are the StarKist Sweet and Spicy and Bold Jalapeno packs.  With some fresh fruits and vegetables on hand, I’m guaranteed to have a quick, filling, nutritious, relatively low-calorie lunch daily.  These packs are also great for an easy meal prep!

 

Some of my favorites mix-ins are listed below.  Mix and match these however you please!  If you’re not into tuna, you can always swap it for shredded lunch meat, rotisserie chicken, lean steak, or beans/lentils!

Here are some of my favorite combos:

  1. Avocado + Roma Tomatoes + Cucumber + Jalapeno/Sweet and Spicy Tuna + Ranch Dressing
  2. Strawberries + Avocado + Red Onion + Sweet and Spicy or Chicken + Balsamic and Olive Oil + Coarse Salt
  3. Carrots + Pickled Cabbage + Tomatoes + Cucumber + Shredded Turkey Meat  or White Beans + Sea Salt and Olive Oil

  • Spring Salad Mix or Mixed Greens or 50/50 Mix
  • Avocado
  • Roma/Grape Tomatoes
  • Peaches
  • Greenhouse Cucumbers
  • Diced Apple
  • Strawberries
  • Carrots

  • Blueberries

Salad Dressings

  • Hidden Valley Ranch
  • Coarse Sea Salt with Olive Oil
  • Olive Oil and Balsamic Vinegar
  • Dijon mustard mixed with Olive Oil
